Hola familia y amigos, welcome back to another shiny platinum colored edition of Central America’s highest rated, most money spinning proper pugilistic paper, The Sunday Brunch – We don’t care about keeping track of leap years, daylight savings OR that whole 28 days in February thing. This week we are diving head first into the shit storm that is Mayweather – Pacquiao coverage, we’re going to answer some of your emails and if there’s time we’ll review Floyd Mayweather’s personal chef’s recipes in our test kitchen and then scoff at them because we are jealous. So, hold on to your Gucci socks and customize your licence plates, we’re about to get “The Manny Team” tattooed on the side of our faces. Without further ado, I gave you your instruction in the dressing room; what I say you must obey – Cuidate, escucha mi, toca los manos y buena suerte…Let’s get it on!
I just want to start off by thanking Al Haymon for this Sunday Brunch. With him all things are possible.
With the big one finally looming large and all the ‘fight denyers’ finally hushed back into their Cheeto caves, few subjects are now left up for debate. For clarifications’ sake, we will quickly run down a few of the more popular misconceptions/untruths about the forthcoming mega fight.
Floyd Mayweather has not hired Angel Heredia for his strength and conditioning (or any) services – He is working with Alex Ariza for the Pacquiao fight.
Floyd Mayweather rightly refused the 5 million dollar penalty that Manny Pacquiao’s adviser, Mike Koncz suggested be in place. Either man stands to lose substantially more than that if a failed drug test surfaces, these things have already been worked into their master contracts – The suggestion appears to be a way to try and shine a bad light on Mayweather as there is no reason to have that additional stipulation.
Just because a rematch clause isn’t in place does not mean that an immediate rematch couldn’t happen.
It’s being widely reported that Floyd Mayweather is “destroying” his sparring partners in camp, including former undisputed welterweight champion, Zab Judah. It’s true that years of hearing about Manny Pacquiao being debated as the greatest fighter of this generation could cause Mayweather to put his whole focus on preparing for this fight.
Both men will likely push each other in this fight to be better than they were before they faced one another. Whether this one will be over fast, or if we’re in store for a lengthy strategy-filled 12 rounder is yet to be seen, but this appears to be the biggest night of both fighter’s professional careers – The culmination of all their years of experience – So we will see them at their very best.
Several prominent individuals within the industry have vocalized their change of heart regarding the winner of the upcoming May 2nd super-fight between American, Floyd Mayweather and “Fighter of the Decade”, “eight division world champion”, Emmanuel Pacquiao, have you altered your stance as well? Can we expect a victory for the Congressman from the Saragani District? – Nonnie Rethanalezzzz
Thanks for taking the time to write again, Nonnie. I have noted that several people have come out publicly to change their official prediction for the upcoming mega-money match-up. I maintain that we will see Mayweather in with stiff resistance all the way up to the final bell, the winner will be the fans of the sport – My official prediction is forthcoming.
Who are your favorite characters from The Walking Dead and why? – Darryl Dixon
I think the Governor played an important role, especially in the novels where it revealed so much about why he became the twisted psychopath he eventually became…what he did to Michone…how that transformed her. Shane was also a really good character and I often wonder how things would have played out between the group had he not had Lori fever.
Where is the smart money being placed in as far as betting goes? – Ban Dlizarian
Thanks for the email, Ban. We don’t suggest betting on fights here at the Sunday Brunch news room, but if you had to put it somewhere I’d say leaving some coin on the draw wouldn’t be an incredibly far fetched wager. As of right now, betus.com has the draw listed as +2000, so even a small bet or a hedge against your main pick would be a smart move.
Do you have any tips or tricks in the kitchen you could share with me? I’m always hungry. – Ran Dafael
Good to hear from you again, Ran. Good chefs have loads of tricks they learn over many years by either trial and failure or from a mentor. When cooking an Asian stir fry, don’t leave food in your pan/wok for more than a minute – It’s important that all your vegetables be nearly raw crispy, but seared on the outside -Cook your protein separate then mix in at the end.
If you’re making a pureed soup, strain the final product through a fine metal strainer (chinois) several times to achieve a restaurant quality texture.
The word “fond” refers to the bits of darkened food stuck to your pan when you’re cooking certain foods. Use alcohol or broth or even water (along with a wooden spoon) to dislodge it and let it become part of your dish – That’s where a majority of the flavor of your caramelized onions is.
Use a corn starch slurry to thicken sauces, but take care to not over thicken. Your sauce can quickly become opaque or even jellied from starch abuse. Some cream sauces can be reduced instead of thickened. A roux (made of butter and flour) is better for Italian or western style dishes, generally speaking, and cornstarch is better for some Asian cuisines.
Finish your dishes with a touch of quality oil (be it sesame or olive) and a good smoked salt if you are able to.
Be excellent to each other.
